Our Story
We're a local business that specializes in making sourdough doughnuts that are light, fluffy, and simply irresistible. Our founder, Jessica Dunkel, is a food scientist who has always had a passion for baking. She started experimenting with sourdough doughnuts as a way to combine her love of baking with her scientific knowledge of fermentation and dough development.
Slow Rise officially launched at the Lawrence Farmers Market in Lawrence, Kansas, where Jessica sold her first batch of sourdough doughnuts to an eager crowd of early morning shoppers. The response was overwhelmingly positive, and it was clear that Jessica had struck a chord with her unique twist on the classic doughnuts.
What sets us apart is our slow fermentation process. Our dough is allowed to ferment for up to 72 hours, resulting in a light and airy texture that melts in your mouth. We also use a combination of traditional and modern techniques to perfect our doughnuts-making process, ensuring that each doughnut is consistent in taste and texture. We take pride in our rotating doughnut flavors, which are inspired by the seasons. Each season, we feature delightful combinations like the tart and sweet Strawberry Rhubarb in the spring and the Southeast Asian-inspired Pandan Coconut. We hope you enjoy trying them all!
